Star Anise Marinated Orange Slices Recipe

Star Anise marinated Orange Slices
with Honeyed Mascarpone and Fresh Mint

Juicy oranges provided a fresh component for the star anise marinated orange slices. This was served with a simple honey mascarpone.

Yields : 6 people

Ingredients :
10 small oranges
10ml cinnamon
6 star anise
400 ml water
500 ml sugar

Method :
1) Peel all ten oranges and finely slice the zest of four oranges. Set aside. Slice oranges into three or four slices per orange. Set aside
2) Half-full a small saucepan with water and bring to the boil. Add orange zest and allow to simmer for about a minute (chef's note: this will remove bitterness from the orange zest). Set the zest aside and discard left over water)
3) Place the 400 ml water, sugar, star anise and cinnamon into a saucepan and heat until sugar is dissolved (stirring continuously). Remove star anise and set aside for later use
4) Once the sugar is dissolved decrease the temperature and slowly reduce the liquid to a syrup consistency. Add star anise and orange zest to the syrup
5) Pour the syrup, while still hot, over the orange slices and leave overnight for the flavours to develop
6) Serve with honey flavoured mascarpone, roasted pine kernels and fresh mint
