Scotch Eggs

 

Here's an idea to make your picnics interesting yet stress free for the person hosting the occasion.

Scotch eggs are a boiled-egg pleasure - and one that is so often forgotten. They are so much more interesting than egg sandwiches or a container full of cocktail sausages.

Yields : 4

Ingredients :

4 Eggs

260 g Pork Sausages

5 g crushed Garlic

15 ml chopped Rosemary

Salt and Pepper

Extras :

1 Whole Eggs, lightly whisked

¼ cup Breadcrumbs

¼ cup Cake Flour

Method:

1) Boil eggs for 10 minutes and de-shell, set aside

2) Squeeze the sausage filling out of the pork skins. Add garlic, rosemary, salt and pepper to taste

3) Divide this mixture into four amounts about 4x65 grams

4) Cover your hands with flour and flatten these amounts

5) Roll hard boil egg in the whisked egg amount, then place flatten sausage mixture over and around this, then roll in flour, then egg and then finally in breadcrumbs and continue with other amounts

6) Place in the fridge to relax for a few minutes (20 minutes)

7) Deep fry in a medium to low oil for 10 minutes or until cooked
